MARSHMALLOW FRIDGE TART





 A family favourite for both old and young alike. I find that doubling the Ingredients makes for a nice size pie for the whole family

Ingredients:
1 packet Tennis Biscuits /graham crackers crumb crust
4 tbsp. butter
1 can condensed milk
½ cup (125 ml) lemon juice
2 cups marshmallows, chopped into small pieces
12 glace cherries, chopped
1 cup (250 ml) cream
1 tsp. (5 ml) vanilla extract
0.22 lb. (100 g) crushed pineapple

Method:
To make the crust;
Mix crushed tennis biscuits with the butter and stir until the mixture resembles damp sand. Keep a handful crumps aside for the top.
Press into the bottom of a deep, rectangular dish (or smaller dishes if you prefer to make individual portions).
In a mixing bowl, combine the condensed milk and lemon juice and beat until thick.
Fold the marshmallows and cherries into the condensed milk mixture.
Whip the cream until stiff peaks form then add vanilla extract and pineapple.
Gently fold the cream into the condensed milk mixture.
Pour the mixture onto the biscuit crumb base, finish with the remaining crumbs over the tart and refrigerate until set.
